Veal Milanese with Parmesan, Spinach and Lemon Dressing

INGREDIENTS IN THE BOX

  • Italian Veal Strip loin
  • 50 gr. Flour
  • 2 fresh egg (use only the egg white, softly whipped)
  • Bread crumb
  • Clarified Butter
  • Fresh Spinach
  • Dry cranberries
  • Lemon vinaigrette
  • Parmesan Cheese

Description

Servings :  1 PERSON

COOKING INSTRUCTIONS

  1. Coat the veal one by one generously with flour (do not shake off the excess flour) and dip in softly whipped egg whites then coat with the breadcrumbs
  2. Heat a Sautee pan with olive oil until smoking and add the fresh spinach. Season it with salt and sautee until wilted but not mushy. To finish add the cranberries and mix well
  3. Fry the Veal both sides in a pan with the clarified butter, then blot well on plenty of paper towels. Season liberally with the salt and black pepper
  4. Spoon spinach into the center of a plate and drizzle the lemon vinaigrette around the spinach
  5.  Place the veal on top of the Spinach
  6. Garnish with the grated parmesan
