  • Butternut squash cut into cubes
  • Green Apple
  • Mint
  • Mustard vinaigrette

Servings :  1 PERSON

COOKING INSTRUCTIONS

    1. Preheat the oven gas or electrical at 180 C
    2. Put squash in a mixing bowl and drizzle with olive oil, season with salt and pepper and spread flat onto a parchment lined ½ sheet tray
    3. Cook the squash in the oven until lightly caramelized and tender. Keep aside until cooled down to room temperature
    4. Cut the apple in thin wedges and chop the mint leaves
    5. Mix the kale leaves with mustard vinaigrette, Pumpkin, apple and mint in a mixing bowl
    6. Plate the salad and sprinkle with plenty of black pepper
